Food Tip - Kale Avocado Salad Recipe

What good is knowing what to eat without knowing how to eat it?

Here is one of my favorite recipes.

Kale Avocado Salad
  • 1 bunch of kale
  • 1 ripe avocado
  • the juice of one lemon
  • 1/4 cup of Olive oil
  • 1/4 cup of raw pumpkin seeds
  • Sea Salt to taste
Cut up kale into bitesize strips and put in bowl. Squeeze lemon all over the kale bits...this will soften the usually tough kale. Peel and cut up avocado on top of Kale and lemon.....now the fun stuff: with your hands squeeze the avocado into the kale until it is completely covered.

Add the olive oil before or after you squeeze depending on your tolerance for goo and ooze!

Add the pumpkin seeds and toss. Now you are ready for a great taste treat!
